The Filipino-French Bistro Making Waves in London
- STEAK TARTARE
When The Independent called Belly “a deliciously defiant addition to London’s dining scene,” we felt every word. Their piece dug into not just what’s on the plate, but the story behind it; from Omar’s childhood at Bintang’s kitchen tables to building a restaurant that lets Filipino flavours shine in a whole new light.
They captured the heart of what we do: wood-fire cooking meets soul-deep Filipino heritage, with dishes that nod to tradition but aren’t afraid to play. They celebrated some of our favourites: the oak-smoked tinola chicken with its gingery beurre blanc, the cod-tempura slider tucked into toasted pandesal, and the frozen custard profiterole with that unapologetically bold fish-sauce caramel.
We created Belly to honour the complexity of Filipino food: its roots, its richness, and its place in London’s modern dining story. Seeing that passion reflected in The Independent reminds us why we do this every day: to serve food that feels like home, even when it surprises you.
